ICC Sydney acknowledges the Gadigal People of the Eora Nation, the traditional custodians of the land on which we are gathered.

Through our award-winning Wine and Drinks menu, we celebrate our locals.  We also hero sustainability, organic producers and those using regenerative land practices within a curated collection that is proudly 100% New South Wales.

ICC Sydney’s wine program highlights regionality, showcasing the finest wines from the state’s diverse areas. Each wine has been selected for its unique qualities and tells the stories of the land, the viticulturalist and the winemaker. We seek to partner with local winemakers and producers to not only minimise our carbon footprint but also contribute to the local economy without compromising quality.

While the NSW theme is apparent throughout the list, the quality of wine making is the most important element in the selection process. Every wine must earn its place, exhibiting consistent quality across multiple vintages. Vibrant youthful wines are featured beside the structure and complexity of the wines in our cellar reserve. Some of Australia’s longest established, most famous producers appear alongside innovative young guns of the wine industry.
